212 dies when off roading

Hello everyone, I am new here and have recently put the 212 non hemi on a monster moto. It only has a stage 1 kit with air intake, exhaust header, and the carb is re jetted. I’ve had it only 5 days and the engine is pretty much brand new. Less than 30 miles on it. It runs great on street and can run for hours without any hiccup. However when I bring it off-roading it can only perform for about 15 minutes before shutting down. It will then not start when choked or in choked. Again it drives great on street but seems to shut down when off roading. Any help will be greatly appreciated. Also the gas tank and valve cover both have filters so they both are breathing.
 
Are you talking about the needle thing that rests above the jet in the carb? Also how would I go about tightening them down to stop them from rocking? Thanks for the reply
 
you don’t the weight of the float can’t be overcome by the tiny spring they use when it gets to bumping and banging.
