Cleaning/Lapping Valves

When cleaning the valves and head, should I stay away from cleaning/polishing the bevel edges of the valve and the seat? I assume that they should then be "lapped". Currently I clean/brush the heads with the valves installed so as not to touch the seats or the area on the valve but wasn't sure if I could/should take the valves out and polish/clean the seats and the entire valve.

No, do not polish the valve face or the seats, only clean the area around the head of the valve and the bottom of the stem, and clean the combustion chamber. Have the valve seats cut and lap the valves to the seat
 
After running the engine, rotate to TDC while still hot. This allows the valves, and seats to cool together. Helps prevent valves from getting out of shape.
