I am switching my sons jr sportsman over to an animal from a flathead this season. I am just wondering what all maintenance needs to be done on regular basis

Flush the methanol from the engine after each race day and change oil as well.
If it's a gasser i'd drain it also and pickle with WD 40

Should i remove carb and clean after each race day or just leave the valve on carb open to dry out internals of carb

no reason to remove the carb but I would recomend using ethanol free gas to flush it out with.

Just ran a mixture of gas (non ethanol if available) and Marvel Mystery oil 50/50 through the fuel pump and carb until the engine start smoking. Then drain the carb. The gas and oil will get into the cylinder and protect it and the valves from rust. Drain the carb using the bottom drain, especially if you use ethanol gas. Then definitely drain the oil as quick as possible.
