Larry Jones makes a tool that hooks over the L block and uses a angle finder on top that makes the readings easier.

What's the difference if I have 8 and 12 degrees of castor versus 6 and 10. Will the kart do the same thing?

No, more caster equally give the rear tires more grip, and take away from the fronts.
Wheel will be heavier, and more sensitivity to bump steer
