Big difference in the two processes .
Thick or thin tires ?
What level of competition ?
Thins just finish .
State race or big money show , cut , even highly contested local stuff .
Tire life more important then possible speed no cut .
There are a lot more only sanding these tires vs cutting them, more important is the amount to internal needed to match track conditions, then also what you wipe with outside.
You may also consider scuffing your Maxxis and letting them set up this time of year.
I like to cut everything- not necessarily to make the tire thinner or even to profile the shoulders on a Maxxis (there's not much to work with to begin with) but just to get the tire flat/true. Minimal cutting, followed by sanding.
Agree though that most just sand and/or scuff them.
