So how exactly would I relieve the valves

Valve reliefs, if needed, are cut into the head of the piston. Care must be taken not to cut too deeply into the piston.
I have seen creative builders use a cutter thru the valve guide in the head to accurately cut reliefs in the piston, with the parts all assembled.
Cleanup is the next necessity.
Fully assemble, with some modeling clay to determine if reliefs are needed.
